You know when you have a mystery illness and you can’t eat anything except smoothies and soup, isn’t that the worst?   Yea, that’s what I’ve been rolling through for the last few weeks…good times.  While I haven’t been able to eat much I’m still trying to, it’s amazing that when you can’t eat things how much you want to.   Hey at least I’ve been inspired to try some new recipes (none of them vegan.)

First up was chicken chili.  Saturday all I wanted was to smell chili cooking in the house.   At the very least I could turn it into soup later.   I found this amazing chicken chili recipe via Annie’s Eats.   The only modification I made was I cooked up a few slices of maple bacon and threw ‘em in.  Not bad…I added some watered down tomato soup to it later to turn it into soup.  Delish.

Tonight I decided to try out a pin I came across for Chicken Parm Meatballs.  While I didn’t get to try ‘em they seemed to go over well.  One modification I made to this recipe was to add about a tablespoon of fresh chopped basil.   I served it up with lemon sauteed spinach.

Here’s hoping I can get off my soup and smoothie mix soon.  I will say I’ve created some incredibly satisfying smoothies though.

Banana Mango Spinach Smoothie

1/2 frozen frozen banana

1 handful of baby spinach

1/2 cup of frozen mangoes

1/2 cup of almond milk (although my crappy blender sometimes forces me to add a little more)

Blend and enjoy!  I’ve also tried just about ever variation of Pumpkin Spice Smoothies, still searching for the perfect one but I’m sure I’ll find it soon.  Happy eating!

 

to be honest..

Late last year I started, what I call, the vegan experiment.  I thought I did pretty well.   I learned tons of new recipes, and really  felt better, then March came and exhaustion set in.   I upped my vitamins, I upped my protein rich veggies and beans, but I needed more, so I reintroduced eggs and some fish into my diet.  I felt better.  I’ve had a few tangos with meat,(chicken, pork) but I’ve always felt meh after.   I still want to head back to a vegan diet later this summer but for now I wanted to listen to my body.   Just thought I’d give a little heads up, you’ll understand when you see the recipe below.

I also needed to listen to my wallet, and when an 8 pound spiral ham showed up in my kitchen on Saturday I knew I couldn’t waste it.   8 pounds of ham.  Jeesh.   So the first night was just a ham meal.   Last night I used leftovers to create, what I think is, THE GREATEST QUICHE EVER!!!!!   My mom’s been using this recipe forever, and it always comes out perfectly.  Bonus, it’s stupid easy.

HAM & SPINACH QUICHE (NO CRUST)

1c chopped ham

1/2c fresh spinach

1/2c shredded cheese

1/4c chopped onion

1c milk

1/2c Bisquick

2 eggs

1/4 tsp pepper

Directions

Heat oven to 400 degrees

Grease pie plate (8″ round)

Mix fillings, onions and cheese in pie plate

Beat remaining ingredients until smooth and pour over fillings in pie plate

Mix again

Bake 40 minutes (it will be finished when you stick a knife or fork into quiche and silverware comes out clean)

Serves 4

Approximate Calories per serving: 215

Soooo good.  I switched up a few things.  I increased the amount of ham and spinach and added an extra egg because I didn’t have an 8″ round pie plate.  I also used green onions.  Still came out pretty well!

I love that my glass dish looks disgusting straight outta the oven.  I swear it was clean when it went in!!

5 degrees out as I type this:

That’s what I call snot freezing cold.   Classy way to describe the weather, but entirely true.  Instead of being able to run out with a light jacket on I’ve got to do the bundle:


I’m not a big fan of the bundle.   I had to say bye to my fingerless gloves for real gloves and remembered that I can’t really use my iPhone when gloves are on.   Not a huge deal, I’m cool with not checking emails when I’m outside, but this product caught my eye:

SmarTouch gloves!   The little pads on the fingers still let you get your swipe on.   Genius!   I’m sure they’ve been around forever but when I saw these yesterday it made my day.   If winter is for real about staying in the Capital Region, I may splurge on a pair of these.

Despite the chilly temps I’ll still make a smoothie to go this morning.   I’m going to try my own creation and hope it doesn’t suck too badly.

1 cup chocolate soy milk

2 handfuls of spinach

1 tablespoon of almond butter

1 tablespoon of ground flaxseed

maybe half a banana if it needs firming up and of course some ice cubes.

I’m in the mood for something chocolatey so we’ll see if this hits the spot.   Stay warm!

To offset the dark chocolate overload I’ve been starting my days with THE GREEN MONSTER.   mmmmm.   If you told me six months ago that I would enjoy drinking spinach in the morning I would’ve laughed in your face.  Stopped.   Then laughed again.  It’s so freakin’ good.   I take them to work in a little cold cup when I can’t lounge in my bed and enjoy.

Oh, side note.   I had the chance to house eat a portobello mushroom burger at Juicy Burgers & More, so good.   A little heavy on the balsamic but still delicious.   Try it, seriously, at lunch tomorrow go and eat it.  Get sweet potato fries too.  You’ll have to run a few extra miles but it’s worth it.

New Year’s Eve kiddo and I went crazy, I had the champagne, he had the Shirley Temple.   New Year’s Day we visited the skating rink at the Empire State Plaza…I’ve so missed skating here!   I also suspended the vegan experiment for a short while  on New Year’s Day to enjoy manfriend’s to die for homemade pizza.   It included: goat cheese, cranberries, caramelized onions and figs.  Holy sh*t, it was one of the best things I’ve ever eaten.   Why can’t goat cheese be vegan?  Goats eat plants, can I consider it a plant?  No?  Crap. Ok.

Tonight I whipped up another faboush recipe from Oh She Glows.  Love her site to pieces.   Creamy Avocado Pasta.   15 minutes and it’s delicious!!!!    This is the avocado “sauce” pre stir.   If you’re someone who used to enjoy cream sauces but no longer can TRY THIS RECIPE.   So yummy!

Alright, back to Louie. I think i have a crush on Louis C.K. I’m still trying to absorb how wrong that is…
